Coriander chutney

Today was a very hectic day as I was running behind my son....He was in the hall playing and me in kitchen....after some time when I peeped out there was no one....I went to the hall and saw the bedroom door was about to close...I ran there and put my head through the Small opening and there he was...sitting so innocently as if nothing was going on there...I picked him and gave him some of my toys(plate,spoon..) and left to work...again missing...uff...He goes into the room and tries to close it...and sits behind the door...about 5 times he did that...then I just locked the door and came to kitchen...again a big cry from the bedroom side...He had put his hand from bottom of the door and was not able to remove it back...I helped him and brought him to hall...again the same process....until finally I stopped cooking and sat near him...Then he gave a cute smile and continued with his toys...
Here is the naughty one...


So today posting a small chutney...My mom used to make this chutney whenever we made pulao...It has a nice flavour of coriander and garlic, both of which are my fav....A very easy to make chutney too...But if you don't like both the flavours then this wont fit you...you will just hate it...



Coriander leaves- 1 bunch
Garlic-2 cloves
Ginger-1 tsp(minced)
Green Chilly-1 no
Curd-2 tbsp
Salt to taste

Method Of Preparation:
Grind all the ingredients with 1 tbsp of curd to smooth paste. Then transfer to a bowl and add the remaining curd.
Serve with rice.


Variations:
1. You can add 1/2(approx) cup of grated coconut and grind.
2. Instead of curd you can add lemon juice and mix. In that case you will be getting a thick chutney.
3. Mint can be added with coriander leaves to get a different flavored chutney. In that case add lemon juice instead of curd.

Tips:
1. While adding lemon juice check the sourness of chutney and add.
2. Do vary the amount of ingredients acc to ur taste buds.

Onion Rings


All Purpose Flour-1 cup
Baking Powder-1 tsp
Salt to taste
Egg-1 no
Milk-1/2 cup
Chilly sauce-1 tsp
Bread Crumbs-1/2 cup
Onion-1 large.
Oil to fry

Method Of Preparation:
1.Slice the onion in the form of rings.Separate and keep aside.
2. Mix flour,baking powder and salt and keep aside.
3. In another bowl mix(whisk) egg,chilly sauce,milk and keep aside.
4. Keep the bread crumbs in another plate.
5. Heat oil in a wok for deep frying.
6. Dip the onion in flour mixture,then in egg mixture and roll in bread crumbs and fry till golden brown.Drain in a kitchen tissue and continue the process.
7. Serve as a side for variety rice/as a snack.




Note & Tips:
1. I used Chinese chili sauce which had garlic in it.If using normal sauce add 1/4 tsp of garlic(paste/powder/minced) while making the egg mixture.
2. I toasted the bread and powdered it,Bread crumbs should be smooth.
3. You can also add just 1/4 cup of milk.

Beans Thoran/Beans Stirfry... and Awards...



Beans-2 cups(cut)
Onion-1/4 piece(cut to small pieces)
Turmeric-1/4 tsp
Garlic-1/2 tsp(minced)
Salt to taste
Mustard-1 tsp
Oil-1 tbsp
Coconut-1/4 cup(grated)
Green chillies-1 no(cut to small pieces)
Curry leaves-1 stalk
Water to cook

Method Of Preparation:
1. Heat oil in a wok,sputter mustard and add onion to it.Fry till it becomes translucent.
2. Add the beans, turmeric, garlic and fry for 2 min.
3. Then add little water and cook with lid closed till beans becomes soft.Add salt and mix well.Cook till it becomes dry.
4. Take the coconut,green chillies and curry leaves in a bowl and crush them with your hand.Add this to the cooked beans and mix well for a minute.
5. Remove from heat and serve as a side for rice.

Green Gram Curry/stew-I[Cherrupayar curry]

My hubby is a fan of this pulse....He likes it in any form..sweet/salt...Here is a curry/stew which can be easily made....


Green gram-1 cup
Green Chilly-1 no(add more if you want it spicy)
Ginger-1 tsp(minced)
Salt to taste.
Coconut Milk-1/2 cup
Coconut Oil-1 tsp
Curry Leaves- 1stalk

Method Of Preparation:
1. Soak green gram for 4 hrs, and cook along with ginger and green chilly till it becomes  soft.
2. Once soft add salt,curry leaves and coconut milk and simmer it.
3. Turn the stove off and add coconut oil on top. Mix and serve.


Tips:
1.To get coconut milk,
    Take  grated coconut(1/2 cup aprox) in a mixer/blender , with little  hot water and process for a minute, then squeeze it . This gives you coconut  milk.
2. If you have not soaked the gram earlier,pressure cook it for 4 to 5 whistles on low.
3. You can sprinkle some pepper powder on top.

Garlic Rolls

A piece of beauty is always memorable...and if its tasty then.....My roaming around in the blog world lead me to these beautiful and super delicious goodies...I found them in suhaina's blog and immediately fell in love with them...and finally they got a special place in my home as well as blog...Thanks suhaina for the recipe....and those tempting pics...I halved the recipe and here it is...

Just out of the oven....under the yellow light..

For Roll:
All Purpose Flour(APF)- 1 nd 1/2 cups
Warm Water- 1/2 cup(add more if you need)
Yeast- 1/2 tbps
Salt - 1/2 tsp
Sugar- 1 tbps
Extra Virgin Olive Oil- 1 nd 1/2 tbps


For Garlic Spread:
Garlic-3 to 4 cloves(minced/crushed)
Salted Butter-4 to 5 tbsp(at room temp)
Coriander leaves-1 to 2 tbsp(minced)

Method Of Preparation of spread:
Mix everything together at room temperature. You can use unsalted butter too,in that case add little salt while mixing.
Method Of Preparation Of Roll:
1. Mix sugar,salt,yeast,warm water,APF and knead to a smooth dough.Add extra water if needed.The dough would be sticky.
2. Then add the oil and knead the dough till it becomes soft.
3. Grease a bowl and keep the dough in that and close it with a damp cloth to rise, for 1 hour or more acc to the temp of place you live. The dough should double its size.
4. Now grease a baking pan with butter and keep aside.
5. Now punch the air in it and knead twice and then roll to a rectangle form using rolling pin.Dust the floor before rolling. Let it atleast have half inch thickness.
6. Now apply the garlic spread over it and roll it tightly(as for swiss roll).Then cut the rolls to four/five pieces.
7. Place the rolls on the greased pan with cut side up,apply remaining spread,apply a wash with milk/egg  and sprinkle some seesame seeds,and let it rise for another 25- 30 min.Close with a damp towel.

8. Meantime preheat the oven to 375F
9. Bake for 20 to 25 mins or till the surface becomes golden in colour.
10. Cool and serve...

Vegetable scrambled Egg

Scrambled egg is a common recipe at my home...Here is something with veggies in it.



Egg-2 no
Milk-2 tbsp
Onion-1 small(cut to small pieces)
Beans-1/4 cup(cut to small pieces)
Tomato-1/2 no(cut to small pieces)
Cabbage-1/4 cup(cut to small pieces)
Carrot-1 medium(cut to small pieces)
Green chilly-1 no(cut to small pieces)
Black Pepper powder-1 tsp
Olive Oil-1 tbsp
Salt to taste.



Method Of Preparation:
1. Heat oil in a wok,add onion and fry for 2 mins,Then add all the vegetables except tomato,mix well,cover and cook with milk till they become tender.Cook on low flame.
2. Add salt and pepper powder and mix well.then add the eggs,  and scramble it and cook on medium till it slightly sets.Then add tomato and mix well.
3. Serve warm with rice or as breakfast.


                              

Tips:
1. While cooking the veg, if you feel that its burning,add 1 to 2 tbsp of water.You really wont need it.
2. Add or remove veg according to your taste.

Green Peas Curry

A quick and simple green peas curry ...

Green peas -1 cup
Onion -1(small,finely chopped)
Curry leaves - 1 stalk
Tomato -1 nd 1/2(finely chopped)
Ginger and garlic  -1 nd 1/2 tsp(minced)
Red chilly powder - 1/2 tsp
Turmeric -1/4 tsp
Chicken Masala-1 tsp
Garam masala powder - 1/2 tsp
Coconut milk -1/4 cup
Vegetable Oil- 1 tbsp
Mustard seeds - 1/2 tsp
Cumin-1/2 tsp
Salt to taste

Method Of Preparation:
1. Heat oil in a wok,splutter mustard  and cumin.
2. Add curry leaves ,ginger, garlic , onions and fry till the onions become light brown.
3. Now add the the masala powders.Once the raw smell goes add tomato and fry till they become soft.
4. Then add the peas and salt.(i had used frozen peas,so had to cook little.If using dried variety,cook it earlier)
5. Once peas get cooked, add the coconut milk.
6. Mix well and let it simmer.Do not boil it.Take from heat.
7. Add coriander leaves and serve with chappati.

Almond Cake...My 100th post

Dear friends its my 100th post today...I  had started this blog in 2008 after 1 month of my marriage posted 2 recipes and then I got  job...So this blog was shut off...Then now after delivery...I had to spend my whole day at home...so suddenly my hubby told me....why don't you start a blog...then this one came into my mind...I opened it and saw that it was still there..so I started to write again...Just thinking that its my diary..Then one fine day Rachel  dropped in and gave a comment to one of my post...I was so thrilled...my first comment...I thanked her in my blog....and the new phase of my life started...all credits go to my hubby,on whom I try all the recipes:), without whose support I wont have done this and you all..I thank  each and everyone of you for your visits, comments, suggestions, criticisms and what not!!!!
The below piece of cake is dedicated to YOU ALL for your support....:)




All purpose flour/Maida-1/2 cup
Silvered Almonds-1/2 cup
Powdered Sugar-1 cup
Baking Powder-1/2 tsp
Egg-2 no
Butter-1/2 cup
Salt-1/4 tsp
Vanilla essence-1 tsp
Almond extract-1/4 tsp
For Topping:
Silvered Almonds-1/2 cup
Crystal sugar-2 tsp

Method Of Preparation:
1. Heat butter in a pan on medium heat for about 2 min,and let cool for 5 min.
2. Finely ground the almonds and keep aside.Preheat the oven to 375 F
3. Beat the sugar and egg till creamy.Add essence and  butter to it and stir again to mix.
4. In a bowl mix APF,Almond powder, salt, baking powder and add this to the sugar mixture.Mix everything together(just until blended).
5. Pour it to a greased 9 in/8 in round pan/square.Top with the silvered almonds and crystal sugar and bake it for 20 to 25 min. or till golden brown(Time varies acc to oven).
6. cool completely, cut and serve.



I had made this earlier in loaf pan....without the toppings...Both are yummy... and..soft.

Tips:
1. To blanch the almonds place it in a bowl and add boiling water to it.Keep for a min and drain,wash with cold water and drain again ,pat dry and slip the skins off.
Do not keep almonds in water for long they will lose their crispness.

Focaccia

Now a days I have started to bake a lot...there was a time when I was afraid to use the oven in my house...Only after making my first cake and pav did my confidence go to such a high level that I bake many things now a days...This recipe I had seen in Magazine TasteofHome... and had decided to prepare it...I shud admit that only the base is same as in book with small changes(measurement)...all other things like  spices, herbs, toppings,  cheese... everything is different...The very truth is I dint have any of the stuffs what they said..:) So I went for my version...It came out fine...soft and tasty..





All purpose flour/Maida-2 cups
Active dry yeast-1 pack(1/4 oz)
Warm Water-1 cup(nearly)
Olive oil-2 tbsp
salt-11/2 tsp
Sugar-1 tsp
Garlic powder-1 tsp

For Topping:
Tomato -1(thinly sliced)
pineapple  -1/4 cup(sliced)
Mushrooms-1 no(thinly sliced)
Mozzarella cheese-1/4 cup(I had very little mozzarella,so added little cheddar cheese)
Parmesan cheese-1 tbsp
pepper,garlic powder-1 tsp






Method Of Preparation:
1. In a large bowl, dissolve yeast in warm water.To this add 11/2 tbsp oil,salt,sugar,garlic powder and flour and make a soft dough(sticky too).
2. Knead the dough on a floured surface for 6 to 8 mins until smooth and soft ball forms.Grease a bowl with little olive oil and place this dough in that.Cover with a damp cloth and let rise in warm place until doubled(nearly 1 to 1nd 1/2 hour)
3. Grease a  rectangle baking pan(I used square pan) atleast 8 or 9 in.. .and keep the dough in that and shape it(see that the thickness is uniform) to rectangle form.Keep it to rise for 30 min.
4. Make dimples on surface of dough using finger, brush dough with remaining oil,sprinkle cheese,arrange toppings with a pinch of salt and then sprinkle Parmesan cheese.
5. Preheat oven at 400 F.Bake for 20-30 min or until golden brown.
6. Cool on rack, sprinkle some pepper, garlic powder,cut to pieces and serve.

Carrot Almond Shake and award

My hubby likes carrot shake...I have made it many times but this time I felt to make a twist to normal recipe...So I was thinking of adding some nuts just to get a crunchy feeling......Then I finally decided to add badam/almonds which gives a crunch feel as well as a great taste.My hubby liked it :)



Carrot-1/2 cup(I used baby carrots,grated)
Almond-1/4 cup
Sugar-2 tbsp(add according to your sweetness level)
Milk-11/2 cup(chilled)
Vanilla essence-1/2 tsp

Grind all the ingredients to smooth form except vanilla and then add vanilla and mix well. Serve cold/ at normal room temperature.



Tips & Notes:
1. This shake was a bit grainny in texture because of the use of almonds.you can make carrot shake without almonds.
2. You can strain it if you want to get a smooth shake else there wud be small pieces of carrot  and almonds in between.
3. Add milk little by little and grind.By doing so you can achieve the desired thickess.

Cauliflower Fry

A fry that goes as a good side for rice....Its quite simple...You need some time to fry it...To maintain the crispness I added corn flour(just mix it...dont coat it)...I have also done it without that and was yummy...We like it either way...


Cauliflower Florets-2 cup(cleaned)
Salt to taste
Chilly Powder-1nd 1/2 tsp
Corn flour-1 tbsp
Ginger-Garlic paste-1 tsp
Water little-2 tbsp(max)
Oil to fry

Method Of Preparation:
1. Mix all the ingredients with little water ,except oil and keep aside for 15 to 30 min.
2. Heat oil in a wok,when hot, drop little amount of florets and fry till crisp on low heat..Drain and continue the process.
3. Serve with rice.

Onion Bhaji/fritters

Onion fritters is a common recipe which is very easy to make and yummy to taste...Here is the recipe for that...We like it crispy so I made it like this...you can also find it in thick flat forms...

                        
Onion-2 no(thinly sliced)
Ginger-1 tsp(minced)
Green chillies-2 no(cut to small pieces)
Chickpea flour/Besan-1 to 1 nd 1/2 cup
Water to form thick paste.
Salt to taste.
Oil to fry



Method Of Preparation:
1. combine onion,ginger,chilly,salt,chick pea and mix it with hands without water.


2. Then add water,little by little and mix well to form a medium thick paste.


3. Heat oil in a wok,drop little batter using spoon(i used hand),fry till golden and crisp.Drain and continue the process.


4. Serve hot with tea.
